I’m all for an easy meal at the end of the day. Some days 4 o’ clock rolls around and I wander around the kitchen thinking that the meal that I planned just doesn’t sound like something I want to eat today…maybe tomorrow but definitely not today. Supper still has to happen though otherwise, my family gets a little crabby!

This easy meal uses only 5 ingredients and a bit of time and you will have a good, simple, hearty supper to feed your family.

Easy Lasagna Rolls Recipe

What You Need:

  • 1 Jar Pasta Sauce (or the equivalent of your favorite homemade pasta sauce!)
  • 1 package of Lasagna Noodles (I used gluten free)
  • 1 16 ounce container Cottage Cheese
  • 1 cup Cheddar or Mozzarella Cheese, shredded (either will work and give a little bit of a different taste, use what you have on hand!)
  • Spices to taste (I used a little bit of garlic powder…you may also want to add salt, pepper, or onion powder )

How to make:

Start by cooking your lasagna noodles al dente. Make sure not to overcook them or they will be difficult to use. Once they are finished cooking, drain and set aside.

In a small bowl, mix together the cottage cheese, shredded cheese, and the spices that you’ve chosen to use.

Lay each lasagna noodle on a towel so it can dry off a bit, take a scoopful of the cheese mixture and run it along the length of the noodle and spread into a layer.

Place a small amount of the pasta sauce into the bottom of a 9×13 baking dish. (Just enough to cover the bottom.) Roll up a noodle and place it in the bottom of the baking dish. Continue until you have used all of your noodles.

Pour the remaining sauce over the top of all of the noodles. Bake the dish at 350 degrees for about 30 to 35 minutes or until the sauce is nice and bubbly. Enjoy!

Variations

Here are a few variations you might want to try to make this dish even more delicious:

Beef it up – Add browned ground beef (or sausage) to the cheese mixture. The meat will help to make it an even more hearty dish which is great if your family is particularly hungry the night you make it!

Cheese it up– Sprinkle a little Parmesan or Mozzarella cheese over the top of the dish before baking.
