  • 1 tbsp olive oil
  • 1 small onion finely diced (about ⅓ cup)
  • 1 clove of garlic peeled and crushed
  • 1 pound white or cremini mushrooms cleaned and quartered
  • 1 tsp mustard seeds
  • pinch of dried thyme
  • 4 medium potatoes peeled and diced (about 4 cups)
  • 2 quarts vegetable or mushroom broth
  • 2 cups fresh or frozen green beans

Instructions

  • In a 4 or 6 quart soup pot, warm the olive oil over medium heat.

  • Add the onion and garlic, and sauté until the onions are softened and fragrant, about 5 minutes.

  • Add half of the mushrooms, the mustard seeds, and thyme. Continue to sauté, until the mushrooms just start to brown,

  • about 8 minutes.

  • Add the remaining mushrooms, potatoes, and broth to the pot. Simmer until the potatoes are tender, about 15

  • minutes.

  • Stir the green beans into the pot, and cook just until they are tender, 3-5 minutes.

  • Serve with garlic bread or grilled cheese triangles.
