Crispy Parmesan Baked Cod Recipe (1)

Making fish for dinner doesn’t need to be complicated. And comfort food doesn’t need to be heavy. This foolproof recipe uses a mild white fish such as cod, which is heart-healthy, high in protein, and lower on the mercury scale. It’s a delicate lean fish, but sturdy enough as a base for a delicious crunchy buttered cracker crumble on top.

Baking it rather than dredging it in oil, keeps it moist but still a lighter version of classic comfort food. And the crispy coating gives it a lovely texture! A crunchy cracker crust with a hint of parmesan and citrus from the lemon is melt in your mouth amazing.

This dish will become part of your rotation, especially if you’re looking to include more lean protein into your diet (or maybe less red meat). Fish taco Tuesdays anyone?

It’s a quick easy dinner ready in 30 minutes which makes it a great weeknight meal that can easily be doubled to serve a larger crowd. If you crave fish every once in a while, this easy recipe will come in handy.

Serve it on top of a bed of rice or a side of vegetables. Use it as a filling for fish tacos, or a mouthwatering sandwich. For the best light version of fish and chips, serve it alongside french fries, wedges, or sweet potato fries!

  • Cod fillets
  • Butter crackers (Ritz or Club crackers)

How to Make Crispy Oven Baked Cod

Preheat the oven and place your pieces of cod on a prepared baking sheet. Use parchment paper to line it or grease it with oil or cooking spray.

Place your butter crackers into a zip lock bag and break into crumbs, using a rolling pin. You can also pulse them in a food processor. Keep in mind you don’t want fine crumbs, you want a bit of texture.

Tips and Variations

  • For a lower calorie option, use Panko bread crumbs instead.
  • For a gluten-free version, swap out any gluten free crackers.
  • A ½ teaspoon of garlic powder added to the crumbs adds another layer of flavor that works nicely.
  • If the fish falls apart easily when pulled at with a fork, you’ll know it’s done. A flaky fish is what you’re aiming for.
  • Finish off the dish with another final squeeze of lemon, before serving, for a little extra citrus.

FAQs

Do you flip cod when baking? ›

Carefully flip the cod and transfer the pan to the oven. Bake for 12-14 minutes until the fish feels slightly firm when gently pressed with your finger.

How do you cook cod so it's not tough? ›

Try a gentle cooking method: Instead of adding fat, you can also try a gentle cooking method like steaming or cooking en papillote. Both of these methods help to preserve Pacific cod's high moisture content and produce incredibly tender results.

Why is my baked cod rubbery? ›

Overcooked fish loses its natural moisture, which can result in a dry and chewy texture. The proteins in the fish also begin to tighten, which can make the fish tough and rubbery. In addition, overcooked fish can have a severe lack of flavor, as the heat causes the natural oils in the fish to evaporate.

How long to bake 2 lbs of cod? ›

How Long To Bake Cod? I bake cod in the oven for 12-15 minutes at 400 degree F, until it's opaque and flakes easily with a fork. My general rule of thumb is to cook fish for 10-12 minutes per inch of thickness. But for perfect results, see my tip above for using a thermometer.

How do you know when cod is cooked enough? ›

The best way to tell if your fish is done is by testing it with a fork at an angle, at the thickest point, and twist gently. The fish will flake easily when it's done and it will lose its translucent or raw appearance. A good rule of thumb is to cook the fish to an internal temperature of 140-145 degrees.

Is cod better in the oven or pan? ›

Pan-frying is a great option for cod fillet or loin as there is time to produce a lovely crispy skin without overcooking the delicate, flaky flesh. This is the way cod and similar white fish are often cooked in restaurant kitchens and is very simple to do at home.

How to bake cod without it getting rubbery? ›

A notoriously finicky fish, cod needs as much moisture as it can get in the hot oven. Cook the cod at a high temperature. The less amount of time the cod spends in the oven, the less likely it is to turn out rubbery and dry. That is to say, cooking it at a high temperature is key to not making it rubbery.

What is the cooking method for cod? ›

The 3 different ways of cooking cod I will be showcasing are: Pan Fried, Pan Seared and Pan Grilled. All of these cooking styles are very popular all over the world, and can easily be done at home with no special equipment or tricky cooking skills.

Why does my baked cod taste bitter? ›

The presence of bile in whole fish and fish viscera is shown to cause bitterness in fish protein hydrolysates. The fat and ash content could also cause bitter taste.

What temperature should cod be cooked at? ›

What Is the Internal Temp of Cod When Cooked? In general, the ideal internal temperature of cooked fish is 145 °F (63 °C). The internal temp of cod when cooked is about the same. An easy way to test if the cod is done is to note when the meat starts to turn opaque and you can separate the meat using a fork.

Why does cod fall apart when cooking? ›

As fish cooks, proteins in the muscle fibers coagulate and the flesh changes from translucent to opaque in appearance. When the collagen softens in heat, it loses its structure and turns to gelatin; the muscle fibers have little to hold them together and the fish separates easily into flakes.

Do you rinse cod before baking? ›

Dry fish: It used to be recommended to rinse fish before baking, but fear of splattering harmful bacteria that might be on the fish changed that. We recommend not rinsing unless you need to rinse off any scales. Pat dry with paper towels whether you rinse or not.

How many people will 1 lb of cod feed? ›

About 1/3 to 1/2 pound per person is a good portion size for cod fillet. It's healthy, low in fat, and absolutely delicious, so you can feel good about enjoying it.

Can you overcook cod? ›

Overcooking cod will make it tough and dry since more moisture evaporates from the fish as its internal temperature rises.

Do you have to flip fish when baking? ›

The second part of the Rule—only flipping the fish once—is as important as the cooking time. Since fish is more delicate than other meats, it can fall apart if you turn it frequently. Another benefit of only turning it once is that you will get a nice sear, resulting in fish that is mouthwateringly delicious!

Do you flip whole fish when baking? ›

Roast, without turning, until the fish is cooked through and the skin is starting to brown, 15 to 20 minutes. (The oven provides more even heat than the grill, so there's no need to flip them.)

Do you cook fish skin side up or down in oven? ›

Drizzle fish with olive oil, sprinkle with salt and pepper and place on a rimmed baking sheet, skin side down if you've left the skin on. Roast fish for 10 minutes per inch of thickness, until the fish is opaque and tender when pierced with a fork but before it starts to flake.

Should you bake fish skin side up or down? ›

So, you want skin that is super crisp and flavorful, just as you would want with chicken. Starting your salmon skin-side down, and cooking it until it is well rendered, lightly browned, and crisp, and then turning the salmon to finish the cooking, will make for a terrific dining experience.
