Thank you for this recipe, I love to cook soups, I have a lot of memories from my childhood. As a child, my grandmother and mother, preparing soup for dinner, usually said — meat soup, added rice or vermicelli. Or chicken soup, again-with rice or any cereal. Admit, having heard about meat soup, unconsciously always expected, that soup consists of meat and broth. Everything else in it seemed out of place and superfluous. As it turned out, meat soup made of meat only exists. Moreover, there are many such soups. My favorite meat soup is French clarified broth or very rich and salted broth with a pie — consomme, cooked from chicken or beef. A good meat soup is obtained from not very young beef with bone. Of course, veal tender and softer, but normal beef with prolonged boiling gives a fine dense broth, which is ideal not only for a simple soup of meat, but also for red borsch or Georgian soup kharcho. Very good broth is obtained from beef ribs or brisket — they have a lot of meat and bones that provide both.

Cut barley to 1/3 cup, only 2 tablespoons of tomato paste, 2 teaspoon thyme, bay leaf, and 2 beef shanks for extra marrow. Richer beef broth. Turns out very good. Usually double the recipe and but some in glass canning jars and freeze for the winter.

Sorry, but this was a serious disappointment. Followed your recipe precisely. What I wound up with looked nothing like your pictures. The tomato flavor from the tomato paste and the diced tomatoes job overwhelmed everything else, so what I wound up with was a chunky tomato soup. Not what I was looking for. I love beef barley soup, but this wasn’t it.

FAQs

Is it better to cook barley before adding to soup? ›

No, you don't need to cook the barley beforehand.

Why does my beef barley soup have no flavor? ›

Why does my beef and barley soup have no flavor? Beef and barley soup/stew benefits greatly from aromatics like onions, as well as acids like red wine or tomatoes and tomato paste, which add a bright note. Cooking long and slow also deepens the flavor.

How can I thicken my beef barley soup? ›

Add Flour Or Cornstarch

You can thicken soup by adding flour, cornstarch, or another starchy substitute. For the best results, never add flour or cornstarch directly to your soup. If you do, it will clump up on top. Instead, ladle a small amount of broth into a separate bowl and let it cool.

What if I put too much barley in my soup? ›

As barley is a starch the best you can do is dilute it, or thin it out a bit. You may need to add a fair bit of broth and more of your vegetal ingredients. Possibly to the point of doubling your recipe. It will depend on when you find the taste and texture to have gotten back to acceptable levels.

What happens if you don't rinse barley before cooking? ›

There is no need to rinse barley before using it. To enhance the flavor of barley, heat the kernels in a skillet for a few minutes or cook it in broth instead of water. You can save time by cooking extra barley and freezing it. Add it to soups or salads as you need it.

What happens if you don't soak barley? ›

The whole-grain barley soaked overnight cooked up the next day in 35 minutes (salting made no difference in timing or texture), while the cooked-from-dry grains took only five minutes longer. Flavor-wise, there wasn't much difference. The verdict? Don't bother soaking whole grains—the payoff is barley worth the effort.

How to add more flavor to beef soup? ›

Bay leaves are great for adding flavor (but not to eat), and fresh parsley is always delicious. Add some black pepper and other fresh herbs to really enhance the wonderful taste. (garlic powder is great with the tender beef!)

How do I increase the depth of flavor in soup? ›

Perk up a Bland Soup With Simple Pantry Staples

Add a splash of vinegar (any kind!), or a squeeze of citrus. Chances are, you could use a little more salt. Go ahead—it's ok. Salt perks up flat flavors and helps balance out bitter-tasting ingredients.

How to make soup really flavorful? ›

Making a delicious soup depends on building flavors as you go along. Aromatics, which include garlic, onion, leeks, carrots and celery, are the basic flavor-building blocks of most soup recipes. Sautéing these vegetables in oil or butter is the first step to boosting your soup's flavor.

How do you fix bland barley soup? ›

If a soup is tasting bland in the bowl, consider adding acid rather than salt. A squeeze of lemon or lime, or a dash of yogurt or sour cream can add brightness to the bowl. Start with the basics. Ensure you've added enough salt and black pepper.

What is the ratio of barley to broth? ›

Yield. To cook 1 cup of barley grains, you'll need 3 cups of water or broth. Like many grains, barley swells considerably when cooked, so 1 cup of dry barley grains will yield 3 cups of tender cooked grains.

Does heavy cream thicken soup? ›

Heavy cream

Use heavy cream as a keto-friendly thickening option for your soups and broths. Heavy cream has more fat than regular whole milk, so you can add it to your soup recipes without worrying about it curdling.

What to avoid when taking barley? ›

Does barley get soggy in soup? ›

Since the barley can absorb too much of the liquid when made ahead, and get mushy, I find it best to cook the barley separately. Make as directed, just omitting the barley.

Do I need to soak barley before cooking? ›

Do you have to soak barley before cooking? Pearl barley does not need to be soaked prior to cooking because it cooks quickly. Hulled barley benefits from soaking in water for a few hours before cooking. However, you should still budget more time for the hulled grain to cook (about 35 to 40 minutes).

What is the purpose of barley in soup? ›

Barley's fiber content helps prevent constipation and promote regularity for a healthy digestive tract. Eating fiber-rich foods such as barley may also contribute to weight loss. This is because it functions as a “bulking agent” in the digestive system, making a person feel fuller for longer.
