Zucchini was the star of last month’s Recipe Redux post where I shared my Gluten-Free Vanilla Zucchini Cake (so soft, so fluffy, so good), and it still happens to be in season this month!

In fact, today is one special day in the world of that beautiful green summer squash…it’s NATIONAL ZUCCHINI DAY!

Of course, I have to celebrate since zucchini is one of my all time favorite veggies. Sure it’s not that flavorful on its own, but THAT is what makes it so versatile and PERFECT for using in all sorts of dishes and baked goods.

From sweet to savory, zucchini does it all! Today I’ve rounded up the most unusual recipes using zucchini to celebrate the veggie in all its green glory. There’s no better way to celebrate the holiday in my opinion!

I love using zucchini to bake with and in my morning oatmeal – I call it my Zucchini Bread Oatmeal. It’s the perfect veggie to add to anything since the flavor is so mild. My favorite veggie is probably butternut squash. Great roundup!

I used to hate zucchini in any form that wasn’t super unhealthy zucchini bread. But I’ve slowly branched out to eating it in various savory applications, throwing it in my smoothies, and of course appreciating Zoodles!

Perfect timing! So many people are overrun with zucchini at this time of year. If you don’t grow then yourself the farm stands sell them really cheaply. I’m not sure which recipe to try first, they all look so delish!
